<p>Each of these turkeys meet our farm standards, but we&#8217;ve decided to source from three different farms that have slightly different breeds and practices.  The objective is to offer our customers a &#8220;fairer&#8221; shopping opportunity, and to present a larger picture of the options of a sustainable, locally-farmed, humane treatment, and zabiha-halal universe.</p>
<p><strong>For Turkeys: </strong><br />
You can choose from any of the following:</p>

<p><a href="http://wholeearthmeats.com/store/#ecwid:category=449450&amp;mode=category&amp;offset=0&amp;sort=normal">3. Pasture-Raised White Turkey -</a></p>
<p>The <strong><span style="text-decoration: underline;">Pasture-Raised Heritage Turkeys</span></strong> are about 8 months old by comparison.  Characterized by their slow growth and natural mating patterns, the saying amongst those who buy the Heritage aka &#8220;Heirloom&#8221; Turkeys for their family gatherings is that once you have a Heritage Turkey you can&#8217;t go back to the others.  Before the mid 1920&#8242;s, Heritage Turkeys and non-Heritage Turkeys had similar growth rates.  Luckily, we still have one portion of our North American food heritage to hold onto.</p>

<p><span style="text-decoration: underline;"><strong>Free-Range White Turkeys</strong></span> are a wholesome bunch too.  They are raised with exposure to the good earth and air, but they&#8217;re kept inside for a portion of their lifetime too.  They grow faster but healthily.  This process of turkey farming is at the entryway to sustainable and healthy farming.  It&#8217;s probably the first step to ensuring that our food, and thus ourselves are in better step with healthier living</p>

<p><span style="text-decoration: underline;"><strong>Pasture-Raised White Turkeys</strong></span> are raised exclusively on pasture but they have been suited since about the middle of the last century to have a faster maturation rate than the Heritage/&#8221;Heirloom&#8221; type.  The major costs to farmers is found in the labor and turkey feed.  In the cold season, their are additional costs (e.g. the need for heat and the built environment).  By late November, our farmers preclude much of those cold season costs because many families gather for Thanksgiving.</p>

<p style="text-align: center;">
1 lb Whole Earth Meats chicken wings, split into drumettes and wingettes<br />
½ cup honey mustard<br />
3 tablespoons brown sugar<br />
1 tablespoon Sriracha Rooster Sauce<br />
1 tablespoon soy sauce<br />
2 teaspoons paprika<br />
2 teaspoons ground ginger<br />
1 teaspoon black pepper<br />
1 teaspoon sea salt</p>
<p>Preheat the oven to 425F. Pat the wings dry with paper towels and season with salt, pepper, paprika, and ginger. Place on a wire rack lined sheet pan and into the oven for 30 minutes. Meanwhile, in a mixing bowl combine the mustard, brown sugar, rooster sauce, and soy sauce. Whisk together to combine. Split the sauce into 2 mixing bowls. Remove the wings from the oven (after the 30 minutes) and put into 1 of the mixing bowls. Lower the oven temperature to 350F. Toss the wings in the sauce until evenly coated and put them back on the wire rack into the 350F oven for another 20-25 minutes, or until the wings are cooked through. Remove from the oven and put into the 2nd mixing bowl. Toss the wings in the sauce again and serve!</p>
